Today was a low-consumption day because it was my wife’s birthday and we spent the day together. I want to share a recipe for cappuccino pie that I received from my mother and used to make the dessert for my wife’s birthday.
Cappuccino Pie
For this recipe, you need the following ingredients:
- 1 chocolate pie crust
- 14 oz sweetened, condensed milk
- 12 oz whipped cream or Cool Whip
- 8 oz cream cheese, softened
- 6 tablespoons chocolate syrup
- 1 tablespoon instant coffee
- 1 tablespoon hot water
Time needed: 8 hours and 15 minutes.
Steps to make cappuccino pie:
- Beat cream cheese in a mixing bowl until fluffy, 2-3 minutes.
- Add sweetened, condensed milk and 4 tablespoons chocolate syrup
Beat on low until blended
- Dissolve instant coffee in hot water.
Ensure that the instant coffee is thoroughly dissolved. If not dissolving, microwave the water for 10 seconds, then stir. The pie will be grainy if instant coffee is not dissolved.
- Add dissolved instant coffee to mixture.
- Fold whipped cream into mixture.
- Pour mixture into pie crust.
- Cover pie and freeze overnight.
- Remove from freezer and drizzle with 2 tablespoons chocolate syrup.
- Decide how to serve.
At this point, the cappuccino pie is done! You may cut and serve as a frozen cappuccino pie or let thaw in the fridge then serve. The pie is slightly gooey but still holds shape if thawed in the fridge.
This is a tasty and simple recipe that I loved eating while growing up and only love more as an adult. I think it’s a win for coffee lovers.
